
Another busy month which left little time to try new recipes, but I had a lot of time with extended family as well as sneak in a quick road trip with my hubby. Things should get back to normal after this month. Can someone please tell me, exactly what is normal? lol
Turkey pesto meatballs and orecchiette: Whole family loved the recipe—it’s a keeper, except…I don’t like turkey. So, I substituted ground beef. Recipe is from Smitten Kitchen—I’ll need to come back to this site for more recipes!
A healthier option this month comes from EatingWell with their Chicken Cutlets with Creamy Spinach & Roasted Red Pepper Sauce recipe. With only 305 calories and 10.3g of carbs per serving, I could have gotten away serving with rice, but chose to grill brussels sprouts on the grill instead. I did substitute the chicken cutlets with chicken tenderloin and the sun-dried tomato halves with ½ cup of fresh cherub tomatoes. I also used 2 cups of spinach and only ½ cup of light sour cream.
